I know that it's summer and hot outside but this is one of our favorite soup recipes that I make time and time again so I wanted to share it here with you...And If your garden is bursting with ripe tomatoes, feel free to substitute about a pound of fresh tomatoes for the canned ones. Serve this with a slice of crusty artisan bread or a grilled cheese sandwich and you're good to go! The best part is that no oven is needed!

Homemade Tomato Soup
ingredients:
What You'll Need:
- 2-3 Tablespoons of olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 28oz. can of whole tomatoes
- 1 14oz. can of diced tomatoes
- 1 cup vegetable broth
- 2 Tablespoons honey
- Sriracha sauce(to taste)
- Handful of fresh basil leaves
- 1/3 cup unflavored almond milk
- salt and pepper to taste

How to cook Homemade Tomato Soup
What You'll Do
- Add the olive oil to a large dutch oven.
- Add the copped onion and minced garlic and salt to taste to the pot.
- Saute for about 5 minutes or until the onion is translucent.
- Add the tomatoes in their juice, broth, honey, basil leaves and a squirt of sriracha(more if you like it spicy)
- Cover and let simmer for 10 minutes.
- Use a submersion blender until you reach the desired consistency.
- Add almond milk and honey.
- Taste and re-season as needed.
- Garnish with basil
