Homemade Tomato Soup

I know that it's summer and hot outside but this is one of our favorite soup recipes that I make time and time again so I wanted to share it here with you...And If your garden is bursting with ripe tomatoes, feel free to substitute about a pound of fresh tomatoes for the canned ones. Serve this with a slice of crusty artisan bread or a grilled cheese sandwich and you're good to go! The best part is that no oven is needed!

Homemade Tomato Soup

ingredients:

What You'll Need:
  • 2-3 Tablespoons of olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 28oz. can of whole tomatoes
  • 1 14oz. can of diced tomatoes
  • 1 cup vegetable broth
  • 2 Tablespoons honey
  • Sriracha sauce(to taste)
  • Handful of fresh basil leaves
  • 1/3 cup unflavored almond milk
  • salt and pepper to taste

How to cook Homemade Tomato Soup

What You'll Do
  1. Add the olive oil to a large dutch oven.
  2. Add the copped onion and minced garlic and salt to taste to the pot. 
  3. Saute for about 5 minutes or until the onion is translucent.
  4.  Add the tomatoes in their juice, broth, honey, basil leaves and a squirt of sriracha(more if you like it spicy)
  5. Cover and let simmer for 10 minutes. 
  6.  Use a submersion blender until you reach the desired consistency.
  7. Add almond milk and honey. 
  8. Taste and re-season as needed.
  9. Garnish with basil
